Amish Friendship Cake

What a relaxing week we have been having! First at the cottage, and then, when we came home, we just basically carried on in "relax" mode....it's been wonderful!

We did manage to take down the electric fence, pull the Tposts, and generally clean up the pasture area the 3 pigs were in.....they sure did a great job rooting up all the sticks in there! So, one day, we got that done and had a fire, burning up all those sticks, and also scrap pieces of wood pieces from the Gman's sawmill.

A lady at the Legion gave me some starter for Amish Friendship Cake...this was about 12 days ago.....so this morning, I finally got the cakes made, boy is it ever good!

Here's the recipe...

1. Receive the starter.....keep it on your counter.
Days 2 - 10: Mush, or work, the starter with your hands....just give it a good working over on the Outside of the ziplock bag. Do this once a day.

Come Day 11, you can make the cake:

Pour starter into non-metallic bowl. Add 1 1/2 cups EACH of milk, sugar, flour


Stir it all up, and then measure 4 separate batters of 1 cup each. Put each into a Ziplock bag, and give 3 away to friends. Use the fourth one to make the cakes....





Preheat oven to 325


To the remaining batter, add:

3 eggs
1 cup oil
1/2 cup milk
1/2 tsp vanilla
1 cup sugar
2 cups flour
2 tsp cinnamon
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large box vanilla instant pudding OR 3 tsps cornstarch

Mix it all together....








Grease 2 loaf pans. Mix 1/2 c sugar with 1 1/2 tsp cinnamon. Use about half this mixture to dust your greased pans.










Pour the batter into pans and sprinkle with the remaining sugar cinammon mixture.




Bake one hour, then let cool for 10 minutes, before removing from pans.....










You can see from the recipe that you can start your own starter.....these cakes are really really really good! We've already eaten half of one, and I'll bring the other one along for neighbourhood coffee tomorrow!







Tonite, we are off to our Legion for dinner and dancing....I think there will be lots of people dressed up in costumes, but we're going as we usually do....guess everyone will just think we're "farmers"......

I have some brewing on the counter too! I add pecans to mine.

That is EXACTLY the same starter I received when I got my goats! I gave all mine away and started some with whole wheat... but it's good isn't it? You can make bread with it also...
