Seafood Surprise Spread - Recipe

We had friends in for dinner last night, roasted chicken (homegrown of course)....ooooh, was it good!

For an appy, I made Seafood Surprise Spread. I got the recipe from an ole College Colleague probably about 20 years ago....yikes, I am getting old!

I don't make it often, but it IS a hit each time I make it....hope you enjoy the recipe....

Ingredients.....

1st Layer -

8 oz softened cream cheese
1/2 cup sour cream
1/3 cup mayonnaise
1 tsp lemon juice
1 tsp dried dill

Mix all these together well and spread it right onto the dish. A 9 inch fluted quiche pan would work well, but I don't have one, so I improvised.

2nd layer -

8 oz fresh or canned shrimp (frozen is ok in a pinch, but be sure to drain it really well)

(I messed up and bought only one can shrimp instead of 2, so I used 1 can shrimp and 1 can crab meat)

3rd layer -

1 cup seafood cocktail sauce (for some reason I have DON'T use Kraft written down, who knows why?) (But, we made our own sauce using horseradish and ketchup)

4th layer - 2 cups Havarti cheese, grated (grates easier if you freeze it a bit first)

5th layer - 1 green pepper, 1 tomato, green onions (all chopped together)
Cover well and chill for several hours (overnight is good). Serve with crackers (Bretons or other wholewheat crackers are wonderful with it!)

Yum! I lov surprise spread. We also make a variation of it for when we have people over that have seafood allergies. Pizza Surprise Spread! Same idea but with pizza/spaghetti sauce, and pepperoni instead of shrimp and crap. A little different but still tasty.
