'Maters....and Making Sauce


We stopped at a Garden Market along the way to grab tomatoes....I already knew from last year that we didn't have even half of what we could go thru in a year.









So we spent a couple of hours picking both Romas and Beefsteaks. We got a total of 225 pounds, which we split with a neighbour.

Today, we started washing and sorting out the Beefstakes. We washed them, cut them into small pieces and set them on the stove to boil for a while.










Once they heated up and softened some, we mashed them with a potato masher.

Then we put them through the mill we have. It takes the seeds and skins away, leaving just the juice!














Then we put all the sauce into the large stockpot and set it on the stove to heat up....

Here is the sauce bubbling away....it has to reduce by a lot.











After a couple of hours....















Later on, we emptied the smaller pot into the larger one. We left it on low all night last night.
It smells wonderful in the house this morning!!!



We'll probably just let it continue until later this afternoon. Then we can start canning! We'll add some parsley, lovage, cilantro and some lemon juice. Then we'll put the jars in the boiling water bath.

Our tomatoes are barely thinking about ripening and since I'm not sure what I'll get, I included three boxes of tomatoes with my order of peaches and pears from Colorado, USA. So, I too am canning tomatoes today. For me it is salsa and then stewed tomatoes not sauce since we have plenty of sauce from last year. It will be so nice when the food storage shelves and freezers are full for the winter.

I still have salsa from last year. I have never made sauce before but then I'm not a pasta eater so when I do need a sauce, I (gasp!) buy a can of pre made stuff. Then I add basil and garlic to it to make it taste better.

We've been picking the odd cherry tomato that has ripened. And yesterday I noticed that one of the Amish Paste tomatoes is taking on some colour, finally!

We're leaving the greenhouse doors closed all the time now, hoping that helps.
